Non-fat breakfast pancakes (pesach)

2eachesPieces Matzoh; broken up
2eachesEgg Whites; beaten
½eachGranny Smith Apple; chopped
1eachTb Sugar
teaspoonCinnamon

Directions

Soak matzoh in boiling water until softened. Squeeze dry. In a mixing bowl, combine egg whites with apple, sugar and cinnamon and mix well.
