|500 grams||Ripe tomatoes; skinned and chopped|

|1 tablespoon||Finely chopped fresh oregano|
|Salt and freshly ground black pepper|
|Oregano sprigs; to garnish|
1. Heat the oil in a saucepan and gently fry the garlic for 2 minutes.
2. Add the remaining ingredients and cook over a moderately high heat for 25-30 minutes, uncovered, until thickened, stirring frequently.
3. Serve with freshly cooked pasta, garnished with fresh oregano sprigs.
