Neopolitan tomato sauce

Measure Ingredient
4 tablespoons Olive oil
2 \N Garlic cloves; chopped
500 grams Ripe tomatoes; skinned and chopped
\N \N ; coarsely, or a 397g
\N \N ; (14oz) can of
\N \N ; chopped tomatoes
\N \N ; (1lb)
1 tablespoon Finely chopped fresh oregano
1 teaspoon Sugar
\N \N Salt and freshly ground black pepper
\N \N Oregano sprigs; to garnish

1. Heat the oil in a saucepan and gently fry the garlic for 2 minutes.

2. Add the remaining ingredients and cook over a moderately high heat for 25-30 minutes, uncovered, until thickened, stirring frequently.

3. Serve with freshly cooked pasta, garnished with fresh oregano sprigs.
