Musamun beef curry

Ingredients

1Potato; cut into 1\" cubes
1Onion; quartered
1cupCoconut Milk
2tablespoonsFish Sauce
1teaspoonBrown Sugar
2Red Chili Peppers; chopped
½cupRoasted Peanuts
Hot Steamed Rice

Directions

Cut beef into 1" cubes. In a saucepan heat oil and curry paste on high heat, until paste bubbles. Add beef, potato, onion, coconut milk, fish sauce, brown sugar, red chili peppers. Stir well and cook for about 10 minutes.

Reduce heat and simmer for 30 minutes. Serve immediately. Sprinkle with roasted peanuts. Accompany with hot steamed rice.

Note: Lamb can be substituted for beef.
