Muffins ( ice cream )

Yield: 12 servings

Measure Ingredient
3 cups Self-raising flour
3 cups Vanilla ice cream, softened
⅓ cup Raw sugar
1 teaspoon Cinnamon

Sift flour into a bowl, beat in the ice cream and spoon mixture into a 12 cup muffin pan.

Combine the sugar and cinnamon and sprinkle a little over the top of each muffin.

Bake at 180øC for 20 mins or until cooked. Serve at once while warm with butter and jam.

Note: Any flavoured ice cream can be used, strawberry or chocolate are particularly good.
