Moroccan sweet carrot salad

Measure Ingredient
8 \N Carrots; peeled and shredded, up to 10
\N \N Raisins; if desired
⅓ cup Honey
¼ cup Lemon juice
1 tablespoon Orange flower water; (you can leave it out but it is what gives it a more Middle Eastern flavor)

Dissolve honey in lemon juice, add carrots and raisins, mix well, sprinkle with orange flower water and let sit one hour or longer before serving, I make this for Shabbat a lot as it gets better the longer it "marinates".
