Mojo garlic dressing

Yield: 4 Servings

Measure Ingredient
1 \N Whole lemon; juiced
4 \N Cloves of garlic; peeled and chopped
¼ cup Oil
1 \N Chopped onion
\N \N Black pepper; (optional)

This comes from a cookbook called All About Cuban Cooking.

Place garlic, onion, lemon juice in small bowl (no plastic!). In a frying pan, bring the oil to a boil. Pour over the ingredients in the bowl and serve over your favorite vegetables boiled or raw as a dressing. Mojo is often used as salsa in several dishes. It must be prepared at the last minute. If prepared ahead, the flavor may change.
