½ | cup | Long grain white rice |
½ | medium | Cucumber; diced |
¼ | cup | Fresh mint; chopped |
½ | cup | Nonfat plain yogurt |
Salt | ||
Black pepper |
Directions
Bring 3 to 4 quarts water to boil. Add rice; boil 10 mins. Mix cucumber, mint, and yogurt in a serving bowl. Drain rice; add to bowl. Add salt and pepper, to taste. Toss well.
