Minted rice

Ingredients

½cupLong grain white rice
½mediumCucumber; diced
¼cupFresh mint; chopped
½cupNonfat plain yogurt
Salt
Black pepper

Directions

Bring 3 to 4 quarts water to boil. Add rice; boil 10 mins. Mix cucumber, mint, and yogurt in a serving bowl. Drain rice; add to bowl. Add salt and pepper, to taste. Toss well.
