Minted rice

| ½ | cup | Long grain white rice |
| ½ | medium | Cucumber; diced |
| ¼ | cup | Fresh mint; chopped |
| ½ | cup | Nonfat plain yogurt |
| Salt | ||
| Black pepper | ||
Directions
Bring 3 to 4 quarts water to boil. Add rice; boil 10 mins. Mix cucumber, mint, and yogurt in a serving bowl. Drain rice; add to bowl. Add salt and pepper, to taste. Toss well.
