½ cup | Long grain white rice |
½ medium | Cucumber; diced |
¼ cup | Fresh mint; chopped |
½ cup | Nonfat plain yogurt |

\N \N | Black pepper |
Bring 3 to 4 quarts water to boil. Add rice; boil 10 mins. Mix cucumber, mint, and yogurt in a serving bowl. Drain rice; add to bowl. Add salt and pepper, to taste. Toss well.
