Mincemeat petit fours

Measure Ingredient
200 grams Pears; peeled, cored and

½ \N Orange; zest removed and
\N \N ; diced
70 grams Raisins; chopped
½ \N Lemon; zest finely chopped
\N \N ; , juice of
30 millilitres Brandy
30 millilitres Grand Marnier
1 tablespoon Sugar
50 millilitres Water
½ teaspoon Ground cinnamon
½ teaspoon Ground cloves
\N \N Black pepper
1 pinch Salt

In a saucepan over a low to medium heat cook all the ingredients, stirring occasionally until the volume has reduced by a quarter (about 20 minutes).

Allow to cool and set aside until ready to use.
