|Thin-sliced sandwich bread|
|1½ cup||Minced; cooked chicken|
|1||Hard-cooked egg; sieved|
|½ teaspoon||Grated onion|
|⅛ cup||Mayonnaise or salad dressing|
|Salt and pepper|
Buy unsliced bread and have it sliced very thin lengthwise at the bakery.
Combine minced chicken, sieved hard-cooked egg, seasonings, and mayonnaise or salad dressing. Spread sliced bread with soft butter or margarine; add filling, and cover with buttered bread. Trim crusts; cut into small squares, triangles, strips, etc. Yield: about 75 small sandwiches.
