Spicy chopped chicken

Yield: 2 servings

Measure Ingredient
10 ounces Cooked chicken breast
2 \N Shallots, chopped
3 \N Scallions, chopped
1 \N Green pepper (jalapeno or serrano type), slice into rings
2 tablespoons Lemon juice
1 tablespoon Light soy sauce
1 pinch Chili powder (dried red type)
10 \N Mint leaves
5 \N Coriander leaves

Chop the chicken breast then mix together all the ingredients except the garnish. Sprinkle with the chopped mint and coriander leaves.

Serve with plain rice.
