Spicy chopped chicken

Ingredients

10ouncesCooked chicken breast
2Shallots, chopped
3Scallions, chopped
1Green pepper (jalapeno or serrano type), slice into rings
2tablespoonsLemon juice
1tablespoonLight soy sauce
1pinchChili powder (dried red type)
10Mint leaves
5Coriander leaves

Directions

Chop the chicken breast then mix together all the ingredients except the garnish. Sprinkle with the chopped mint and coriander leaves.

Serve with plain rice.
