½cupChopped Parsley
1tablespoonChopped Fresh Mint ---DRESSING------
¼cupLemon Juice
1teaspoonCumin
¼teaspoonSalt -- (or to taste)
¼teaspoonPepper
¼cupOlive Oil

Directions

Combine salad ingredients together and toss lightly. For dressing, add spices to the lemon juice and beat in oil. Pour over salad and chill for several hours.
