Middle eastern kebabs

1 | Clove garlic, very finely chopped | |
1 | teaspoon | Fresh root ginger, minced or grated |
2 | tablespoons | Tomato puree |
1 | tablespoon | Lemon juice, fresh or bottled |
1 | tablespoon | Freshly chopped flat-leaf parsley |
1 | teaspoon | Freshly chopped mint |
½ | teaspoon | Ground cumin |
1 | pinch | Cayenne pepper |
650 | grams | Healthy eating lamb mince |
1. Preheat the grill or barbecue. Put all the ingredients, except the lamb, into a bowl and mix together. Add the lamb and mix well using your hands.
2. Shape the mixture into eight sausages. Thread them onto skewers. Cook under the grill for about 10-12 minutes, turning them over from time to time. Serve with pitta bread, salad and yogurt.
