Microwave peach butter

Yield: 4 Servings

Measure Ingredient
2 cans (16 oz) peach halves, drained
3 tablespoons Powdered fruit pectin
¾ teaspoon Cinnamon
¼ teaspoon Allspice
2¼ cup Sugar

Puree peaches in food processor. In 2 quart microwave-safe bowl combine pureed peaches, pectin and spices. Mix well. Microwave on high for 6 minutes or until mixture is very hot, stirring evey two minutes. Add sugar, blend well, microwave on high 5-6 minutes until mixture comes to a rolling boil, stirring once during cooking. Microwave an additional 1 minute. Ladle into 4 clean 8 oz. jars leaving ½" headspace. Cool slightly, cover with tight fitting lids. Cool several hours, store in refrigerator up to 3 weeks or in freezer 3 months.
