Preheat oven to 375F. Rinse cod and pat dry. Arrange fillets in a large baking dish, folding thin tail ends under each to give fillets even thickness.

Pour tomatoes and their juice over fish. Sprinkle with capers and/or olives, followed by Parmesan cheese.

Bake fish uncovered in heated oven until just opague in center, 20-25 minutes for fillets about 1 inch thick. (The pan juices are tasty poured over rice or couscous.)
