Baked cod and vegetables

Ingredients

46-ounce cod fillets
1largeTomato; sliced
1mediumCucumber; sliced
1tablespoonPlus 1 tsp. olive oil
cupOnion; chopped
1Clove garlic; minced
½Green bell pepper; chopped
2tablespoonsParsley; chopped
½teaspoonMarjoram; or 1 Tbs. fresh, chopped

Directions

Prep: 10 min, Cook: 25 min.

Preheat oven to 375øF. Arrange fish fillets in an oiled baking dish.

Arrange tomato and cucumber slices over each fillet. Heat oil in a heavy saucepan over medium heat. Saut‚ onion, garlic and bell pepper until onion is tender. Do not brown. Remove from heat. Stir in remaining ingredients.

Spoon mixture over fillets. Bake 20 minutes or until fish flakes easily.
