Baked cod provencal

Ingredients

4Cod fillets (1 1/4 lb)
1Onion,medium-size,chopped
2Garlic cloves,finely chopped
2tablespoonsOlive oil
28ouncesTomatoes,drained/chopped
1tablespoonCapers
¼cupBasil,fresh,chopped
8Black Greek olives,pitted
1tablespoonLemon juice
1teaspoonOregano,dried leaf,crumbled
½teaspoonSalt (opt)
¼teaspoonPepper

Directions

1. Preheat oven to 450'F. Arrange fillets in 8x8x2" square baking dish.

2. Saute onion and garlic in oil in medium-size skillet over medium heat 3-5 minutes or until lightly softened. Add tomatoes, capers, basil, olives, lemon juice, oregano, salt if using, and pepper.

Simmer, stirring occasionally, 8 minutes. Spoon sauce over fish.
