Mc favorite pancakes

Yield: 12 pancakes

Measure Ingredient
1 cup Whole wheat flour
1½ teaspoon Baking powder
1¼ cup Diluted low fat soy milk
1¼ cup Unsweetened applesauce
½ teaspoon Vanilla extract
1 teaspoon Egg replacer; well mixed with 2T water and beaten till frothy

Mix the flour and baking powder together. Mix the wet ingredients together, including the Egg Replacer mixture. Combine the wet and dry ingredients and beat until well blended. Pour the batter onto a hot nonstick griddle. When bubbles form on top and the edges are beginning to dry out, turn and bake on the other side.
