Mayonnaise (whole egg)

Yield: 4 Servings

Measure Ingredient
1 \N Egg
1 teaspoon Salt
½ teaspoon Prepared mustard
½ tablespoon Sugar (up to)
1¼ cup Salad oil
2 tablespoons Lemon juice or vinegar
1 tablespoon Hot water

Beat egg well. Add seasonings; then beat well. Add ¼ cup oil; beat until thick. Add the rest a little at a time. Last of all add the water. It can also be made using only the yolk.
