Mattie ball's rhubarb custard pie

Measure Ingredient
2 cups Rhubarb -- diced
1 \N 9 Inch Pie Shell -- unbaked
2 \N Eggs
2 tablespoons Water
¾ cup Sugar
1 tablespoon Flour
1 teaspoon Lemon Rind -- grated
\N pinch Salt
2 tablespoons Unsalted Butter

Place the rhubarb in the pie shell. Combine the eggs, water, sugar, flour, lemon rind, and salt. Pour over the rhubarb and dot with butter. Bake in a 350 F oven for 35-45 mins.
