Mattie's sweet potato pudding topped with marshmallows

Yield: 8 servings

Measure Ingredient
2 pounds Sweet Potatoes
¼ cup Butter Or Margarine
1 cup Sugar
3 \N Eggs
¾ cup Evaporated Milk
2 teaspoons Vanilla Extract
1 teaspoon Ground Cinnamon
3 tablespoons Dark Rum -- optional
1 pounds Marshmallows

Preheat oven to 375 F. Wash and boil sweet potatoes in their skins until fork tender. Peel, then add butter or margarine while potatoes are still hot, and mash with a potato masher until mixture is smooth.

Add sugar, stirring until well mixed. Then add eggs, one at a time, beating mixture well until all eggs have been added. Stir in evaporated milk, vanilla, cinnamon, and rum if desired. Pour into a buttered 2-qt casserole and bake for 30 mins. Top with whole marshmallows and continue baking for about 5 mins or until melted and nicely browned. Serve hot.

Yield: 8 servings.
