Mark's carrot cake

Yield: 1 servings

Measure Ingredient
1 cup All purpose flour
1 teaspoon Baking soda
2 teaspoons Baking powder
1 teaspoon Cinnamon powder
½ teaspoon Salt
¾ cup Vegetable oil
1 cup White sugar
2 cups Grated carrots
½ cup Chopped walnuts

Sift & mix the flour, baking soda, baking powder, cinnamon & salt.

Add the oil & sugar. Mix well. Stir in the carrots & walnuts.

Enusre that all is well mixed. Transfer to a greased cake tin approx. 20 cm X 20 cm. Bake at 350F for about an hour or until a knife inserted in the centre of the cake comes out clean. Cool for a few minutes on a wire rack. Turn out & let cool completely.
