Marinated olives

Yield: 4 servings

Measure Ingredient
4 ounces Green olives
2 \N Thin lemon slices,
\N \N Quartered
2 teaspoons Coriander seeds, lightly
\N \N Crushed
1 teaspoon Dried mint
2 \N Garlic cloves, crushed
\N \N Olive oil to cover
4 ounces Black olives
¼ \N Red bell pepper, cut into
\N \N Strips
1 \N Fresh red chile, cored
\N \N Seeded and cut into rings
\N \N Sprig of Thyme

Put green olives in a preserving jar or screwtop jar. Add lemon slices. Add coriander, mint and half of garlic to jar. Cover with olive oil and seal jar.

Put black olives in another jar. Add red bell pepper, chile, thyme and remaining garlic.

Cover with olive oil and seal jar. Leave to marinate at least 2 days before serving.

Yield: 6 servings
