Maple poached pineapple

Measure Ingredient
¼ cup Pure maple syrup; more for serving
3 tablespoons Rum; (optional)
1 pounds Pineapple chunks
½ cup Plain lowfat yogurt

Prep: 5 min, Cook: 5 min.

Combine maple syrup and rum in a heavy non-reactive saucepan over medium high heat. Bring to a boil. Add pineapple and simmer 2 minutes. Stir and simmer another 2-3 minutes or until pineapple is tender. Serve poached pineapple with maple syrup and yogurt.
