Maple poached pineapple

¼cupPure maple syrup; more for serving
3tablespoonsRum; (optional)
1poundsPineapple chunks
½cupPlain lowfat yogurt

Directions

Prep: 5 min, Cook: 5 min.

Combine maple syrup and rum in a heavy non-reactive saucepan over medium high heat. Bring to a boil. Add pineapple and simmer 2 minutes. Stir and simmer another 2-3 minutes or until pineapple is tender. Serve poached pineapple with maple syrup and yogurt.
