From Vegetarian Times, VEGAN In small pan over low heat, heat maple syrup (do not boil, trust me on this) Add cranberrries and zest. Keep warm until ready to serve. Reassemble pear quarters into two pear shapes using apricot to hold tops and bottoms together. The apricots are sticky enough and spongy enough to hold the reassembled pear together.)
