|3 mediums||Ripe tomatoes; peeled and chopped|
|2 mediums||Cucumbers; peeled, coarsl.chopd|
|¼ cup||Wine vinegar|
|½||Onion; chopped (opt.)|
|3 tablespoons||Olive oil|
|1||Clove garlic; minced|
|Salt; to taste|
|3 slices||White bread; cubed|
|Finely diced vegetables|
|Parsley; for garnish|
|Hard-boiled eggs, chopped; for garnish|
Combine tomatoes, cucumbers, green pepper, water, vinegar, onion, olive oil, garlic and salt in batches in blender. Blend on Medium until smooth.
Increase speed to High. Add bread, a little at a time thought hole in top.
Stir down. Chill thoroughly. Garnish as desired. Can serve with parsley and egg garnish. We like to eat this with croutons.
