Malaga gazpacho

Ingredients

| 3 | mediums | Ripe tomatoes; peeled and chopped |
| 2 | mediums | Cucumbers; peeled, coarsl.chopd |
| ½ | cup | Water |
| ¼ | cup | Wine vinegar |
| ½ | Onion; chopped (opt.) | |
| 3 | tablespoons | Olive oil |
| 1 | Clove garlic; minced | |
| Salt; to taste | ||
| 3 | slices | White bread; cubed |
| Finely diced vegetables | ||
| Parsley; for garnish | ||
| Hard-boiled eggs, chopped; for garnish | ||
Directions
Combine tomatoes, cucumbers, green pepper, water, vinegar, onion, olive oil, garlic and salt in batches in blender. Blend on Medium until smooth.
Increase speed to High. Add bread, a little at a time thought hole in top.
Stir down. Chill thoroughly. Garnish as desired. Can serve with parsley and egg garnish. We like to eat this with croutons.
NOTES : This recipe tastes like Gazpacho that we ate in Spain. Thickened with
bread.
