Make-ahead pineapple carrot salad

1packOrange gelatin; (8 oz)
1cupBoiling water
½cupCold water
½cupShredded carrots
1canCrushed pineapple; drained (8 oz)
cupChopped pecans
½cupFlaked coconut
cupChopped celery

Directions

Dissolve orange gelatin in boiling water in a large bowl. Add cold water and chill until the consistency of unbeaten egg white. Stir in remaining ingredients. Pour mixture into lightly oiled 4-cup mold. Chill until firm.

Unmold onto lettuce lined serving plate.
