Make-ahead pineapple carrot salad

| ½ | cup | Cold water |
| ½ | cup | Shredded carrots |
| 1 | can | Crushed pineapple; drained (8 oz) |
| ⅔ | cup | Chopped pecans |
| ½ | cup | Flaked coconut |
| ⅓ | cup | Chopped celery |
Directions
Dissolve orange gelatin in boiling water in a large bowl. Add cold water and chill until the consistency of unbeaten egg white. Stir in remaining ingredients. Pour mixture into lightly oiled 4-cup mold. Chill until firm.
Unmold onto lettuce lined serving plate.
