Yield: 6 servings

Measure Ingredient
1½ cup Brown rice, short grain (about 4 cups cooked rice)
4 cups Water
¼ teaspoon Salt
¼ teaspoon Cinnamon, ground
¼ cup Pine nuts, toasted
¼ cup Raisins
8 ounces Fresh apricots; cut into eighths

Place rice, water, and salt in a large saucepan over medium-high heat. Cover, bring to a boil, reduce heat to medium. Cook until tender, about 30 minutes.

Transfer rice to a large bowl and sprinkle with cinnamon. Add remaining ingredients to rice, toss, and season to taste. Serve immediately.
