Mackerel mediterranean

Ingredients

4Mackerel (about 1 1/2 lbs.
Each), filleted, unskinned
2mediumsOnions, sliced thin
3cupsTomatoes (fresh or canned),
Chopped-coarsely and drained
½teaspoonCoriander, ground
½teaspoonFennel, ground
½teaspoonBasil
½teaspoonOregano
1Clove garlic, minced
½teaspoonSalt
Pepper to taste
tablespoonOlive oil

Directions

1. Preheat oven to 350F. Wash mackerel. In casserole or baking pan, layer mackerel fillets, skin-side up, with onions in between. 2.
