Mackerel in tomato sauce

Yield: 4 servings

Measure Ingredient
2 tablespoons Olive oil
1 small Onion, sliced
½ \N Clove garlic, peeled and chopped
2 tablespoons Water
½ teaspoon Salt
½ teaspoon Pepper
3 pounds Mackerel fillets, cut into 4 pieces
1 tablespoon Chopped parsley
1 \N 8-ounce can tomatoes,
\N \N Undrained
\N \N Parsley sprigs, for
\N \N Garnish

1. Place olive oil, onion, garlic, and parsley in large skillet; saute until onion is browned. 2. Add tomatoes, water, salt, and pepper to onion mixture; simmer for 5 minutes. Add mackerel, cover, and simmer for 5 minutes. Turn mackerel over; cook for 10 minutes more. 3.
