Low fat chocolate chewies

Yield: 30 cookies

Measure Ingredient
3 \N Egg whites
\N pinch Salt
1 cup Sugar (scant cup)
3 tablespoons Cocoa (Not Dutch processed)
\N \N Shifted
½ teaspoon Vanilla
½ ounce Semi-sweet chocolate, finely
\N \N Chopped

Preheat oven to 275 and place oven rack in the middle position. Line one or two sheet pans with foil or parchment paper. Set aside.

Beat the egg whites with the salt to a soft peak stage. Add the sugar slowly, beating until the mixture is very thick. *Gently* stir in the cocoa powder, vanilla and chopped chocolate.

Place walnut size mounds of the batter on the prepared pans and bake in the preheated oven for 30 minutes until dry on the surface, but still soft inside.

Slide the foil or paper with its cookies onto a cooling rack and cool for 5 minutes.

Peel the foil or paper off the still warm cookies, then cool cookies completely on rack.
