Double chocolate chews~

Yield: 32 servings

Measure Ingredient
4 tablespoons Unsalted butter -- softened
4 tablespoons Nonfat cream cheese -- (1/4 cup)
⅓ cup Sugar
½ cup Dark brown sugar -- firmly packed
1 teaspoon Pure vanilla extract
1 cup All-purpose flour
½ cup Dutch-processed cocoa
¼ teaspoon Salt
¼ cup Mint chocolate chips
\N \N Nonstick cooking spray

Prep Time: 20 minutes Total time: 28 minutes Preheat oven to 350~. Spray 2 sheetpans with nonstick cooking spray.

In a medium mixing bowl, cream together butter, cream cheese, sugar and brown sugar. Beat in vanilla. Into a small bowl, sift flour, cocoa and salt. Blend dry ingredients into butter mixture. Stir in chocolate chips. Divide dough into quarters and taking one-eighth of a quarter, roll it between the palms of two hands to form a ball and place it on a sheetpan. Repeat to form 32 dough nuggets. Using the bottom of a glass, press the nuggets into 2-inch rounds. Bake for 8 minutes, until slightly puffed and very soft to the touch. Let cool on the pans for 1 minute before transferring to racks to cool completely. Makes 32 2-inch cookies.
