Low calorie zucchini dressing - sl 11/86

Ingredients

½cupPlus 2 tbsp onion; chopped
½cupPlus 2 tbsp celery; chopped
1cup;boiling water
1cupUnsalted chicken broth
2eachesEggs; slightly beaten
1each(8-oz) package herb-seasoned stuffing
1teaspoonPoultry seasoning
½teaspoonButter flavoring
¼teaspoonRubbed sage
teaspoonPepper
Vegetable cooking spray

Directions

Cook zucchini, onion, and celery in 1 cup boiling water 15 minutes; drain well. Mash. Add chicken broth, eggs, stuffing mix, poultry seasoning, flavoring, sage, and pepper; stir well. Spoon mixture into a shallow 2-quart baking dish coated with cooking spray. Bake, uncovered, at 350F for 25 minutes or until heated. Yield: 8 servings. (about 149 calories per 1 cup serving).
