Yield: 4 Servings
|16 ounces||Sole fillets|
|1 tablespoon||Olive oil|
|2 tablespoons||Fresh squeezed lemon juice|
|1 cup||Lemon-Dill Coating Mix - modified|
|\N \N||Lemon wedges, (optional)|
FOR FISH: Whisk lemon juice and olive oil together. Brush juice/oil mixture onto both sides of each fish fillet; sprinkle with salt. Place ½ cup Lemon-dill Coating in a shallow dish; dredge fish in topping. Place fish in an 11 x 7 x 2-inch baking dish coated with cooking spray.
Bake at 400 degrees for 15 minutes or until fish flakes easily when tested with a fork. Yield: 4 servings. Serving Ideas : Serve with lemon wedges, if desired.
NOTES : Use coating mix for fish or chicken.
