Measure Ingredient
1 teaspoon Lemon peel -- grated
2¼ cup Unbleached flour
½ teaspoon Baking powder
½ teaspoon Baking soda
¼ teaspoon Salt
1½ cup Granulated sugar
¾ cup Applesauce -- at room
Temperature
3 Egg whites -- whipped
¾ cup Skim milk -- at room
Temperature
4½ teaspoon Lemon juice -- at room

Preheat oven at 350. Prepare pan(s) with cooking spray and flour.

In a mixing bowl, combine lemon peel, flour, baking powder, baking soda, salt, and sugar. In another mixing bowl, combine applesauce, egg whites, milk, and lemon juice. Mix dry ingredients with wet ingredients just until moistened. Pour batter into prepared pan(s).

Bake for 40 to 50 minutes depending on pan size.
