Kidney beans and rice

Yield: 4 Servings

Measure Ingredient
1 tablespoon Olive oil (or cooking spray for FF)
2 Cloves crushed garlic
2 cans Red kidney beans(undrained)
1 medium Onion; thinly sliced
½ Green pepper sliced lengthwise.
1 medium Bay leaf
Salt & pepper to taste

Date: Wed, 31 Jul 1996 19:00:03 -0500 cook garlic then add kidney beans and bay leaf. Cook for 5 minutes, then add remaining ingredients and simmer for 20 minutes. Serve over white or brown or wild rice. I have added canned tomatoes for a different touch for my kids, once in a while.
