Yield: 8 Servings
|1 pounds||Dried red kidney beans|
|2 quarts||Cold water|
|1 medium||Onion; chopped|
|1 large||Green pepper; chopped|
|1 cup||Cooked ham; minced (optional)|
|4 cups||Cooked brown rice|
Place beans in a large kettle, add water and soak overnight. Next day, add onion, green pepper, ham, salt and pepper to beans in their soaking water.
Bring to boil, lower heat and cook 2-½ hours. Remove cover and cook another 30 minutes on lowest heat. Serve over beds of hot brown rice.
NOTE: Brown rice is raw rice which has not been polished to the white stage usually seen.
