Yield: 6 servings
|1 teaspoon||Olive oil|
|½||Red onion; diced|
|2||Cloves garlic; minced|
|1 cup||Chicken stock; fat-free/low salt|
|1½ cup||Tomato sauce|
|1 cup||Long-grain brown rice; uncooked|
|½ cup||Black beans; drained and rinsed|
|½ teaspoon||Creole seasoning|
1. Spray saucepan with cooking spray; add olive oil and heat. Add diced onions and saute. Add chicken stock and tomato sauce. When boiling, add rice. Simmer for 1 min; then cover and steam until done, about 40 to 45 min.
2. Combine black beans with cumin and seasoning. Microwave 1-½ min. on high. Using a large slotted spoon, smash beans until half are mush. Combine with hot, cooked rice.
