Rice and black beans

Ingredients

1teaspoonOlive oil
½Red onion; diced
2Cloves garlic; minced
1cupChicken stock; fat-free/low salt
cupTomato sauce
1cupLong-grain brown rice; uncooked
½cupBlack beans; drained and rinsed
½teaspoonCumin
½teaspoonCreole seasoning

Directions

1. Spray saucepan with cooking spray; add olive oil and heat. Add diced onions and saute. Add chicken stock and tomato sauce. When boiling, add rice. Simmer for 1 min; then cover and steam until done, about 40 to 45 min.

2. Combine black beans with cumin and seasoning. Microwave 1-½ min. on high. Using a large slotted spoon, smash beans until half are mush. Combine with hot, cooked rice.
