Rice and black beans

Ingredients

| 1 | teaspoon | Olive oil |
| ½ | Red onion; diced | |
| 2 | Cloves garlic; minced | |
| 1 | cup | Chicken stock; fat-free/low salt |
| 1½ | cup | Tomato sauce |
| 1 | cup | Long-grain brown rice; uncooked |
| ½ | cup | Black beans; drained and rinsed |
| ½ | teaspoon | Cumin |
| ½ | teaspoon | Creole seasoning |
Directions
1. Spray saucepan with cooking spray; add olive oil and heat. Add diced onions and saute. Add chicken stock and tomato sauce. When boiling, add rice. Simmer for 1 min; then cover and steam until done, about 40 to 45 min.
2. Combine black beans with cumin and seasoning. Microwave 1-½ min. on high. Using a large slotted spoon, smash beans until half are mush. Combine with hot, cooked rice.
