1 teaspoon | Olive oil |
½ \N | Red onion; diced |
2 \N | Cloves garlic; minced |
1 cup | Chicken stock; fat-free/low salt |
1½ cup | Tomato sauce |
1 cup | Long-grain brown rice; uncooked |
½ cup | Black beans; drained and rinsed |
½ teaspoon | Cumin |
½ teaspoon | Creole seasoning |
1. Spray saucepan with cooking spray; add olive oil and heat. Add diced onions and saute. Add chicken stock and tomato sauce. When boiling, add rice. Simmer for 1 min; then cover and steam until done, about 40 to 45 min.
2. Combine black beans with cumin and seasoning. Microwave 1-½ min. on high. Using a large slotted spoon, smash beans until half are mush. Combine with hot, cooked rice.
