Key lime muffins

Yield: 1 Servings

Measure Ingredient
2 cups Flour
1 tablespoon Baking powder
½ teaspoon Salt
⅔ cup Sugar
1 \N Egg; beaten
⅓ cup Butter; melted
¾ cup Milk
¼ cup Lime juice
2 tablespoons Grated lime peel

Preheat oven to 400 degrees. Sift the first 4 ingredients together. Stir in the egg, butter, milk, lime juice, and peel, until just moistened. Fill paper-lined muffin tins full. Bake approximately 20 minutes.

Makes 12 muffins.
