Citrus muffins

Yield: 12 Muffins

Measure Ingredient
2 Eggs
½ cup Sugar
½ cup Oil
½ cup Milk
Grated zest of 1 lemon
Grated zest of 1 orange
Fresh juice of one lemon and
One orange (should measure
1/2 cup, combined)
1¼ cup Flour
1 cup Whole wheat flour
1 tablespoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt

IN A LARGE BOWL, MIX

IN A SMALL BOWL, COMBINE

Pour the wet ingredients into the dry ingredients and stir until just moistened. Spoon into a medium muffin pan (greased) and bake in a 400F oven for about 20 minutes.
