Key lime mayonnaise

Ingredients

| ½ | teaspoon | Dry mustard |
| ½ | teaspoon | Salt |
| 1 | cup | Canola or olive oil |
| 1½ | tablespoon | Key lime juice |
| ½ | tablespoon | Very hot water |

Method: In blender, combine egg white, mustard, sugar and salt; blend 2 seconds. With motor running, gradually add ½ cup oil, then 1 tablespoon juice, then remaining ½ cup oil, then remaining ½ tablespoon juice, then hot water. Stop motor and scrape blender as needed. Blend till consistency of mayonnaise. Refrigerate covered till needed.
