Ancho chile and lime mayonnaise

Measure Ingredient
3 Egg Yolks
1 Lime ; Juice of
6 ounces Vegetable Oil
1 pinch Salt
½ Ancho Chile Reconstituted; Seeded and Chopped.

Chile Today - Hot Tamale

Whip egg yolks in food processor or blender. Add oil in a slow, steady stream until incorporated. Remove and place in mixing bowl. Whip in remaining ingredients. Serve with crab cakes, smoked fish or shrimp.
