Jenny's eggs florentine

Measure Ingredient
4 Egg;poached;
4 English Muffin;toasted;slice
4 Cheddar Cheese;slices
¾ cup Mayonnaise
¾ cup Sour Cream
1 tablespoon Mustard
1 tablespoon Lemon Juice
⅛ teaspoon Cayenne
½ cup Spinach;cooked,squeezed dry

Blend last 6 ingredients in a blender or processor.

Gently heat resultant sauce in sauce pan. Place cheese slices on toast, broil them till cheese melts.

To serve, place poached eggs on the muffins and top with sauce.
