Egg florentine

Measure Ingredient
1 \N Bag spinach
\N \N Nutmeg
\N \N Pepper and salt
1 large Egg
½ pint Milk
\N \N Plain white flour
\N \N Butter
\N \N Strong Cheddar cheese
\N \N Croutons or fried crumbs

Cook the spinach and drain. Season and shape into a nest. Put a poached egg in the middle, covered in cheese sauce.

Toasted crumbs on croutons on top and serve with crusty bread and this meal should be proceeded by a bowl of coleslaw.
