4Eggs; lightly beaten
Salt; a pinch
¼cupPowdered sugar
¾teaspoonVanilla
4Thick slices egg or sweet bread
1Ripe banana
½cupStrawberries; sliced
½cupPecans; chopped
½cupCanola oil

Directions

Directions: Combine half & half, eggs, salt, sugar and vanilla in a mixing bowl and whisk to combine. Using one slice of bread, dip one side of the bread in egg mixture and set on waxed paper dipped side up. Cover with a layer of sliced fruit. Using a second piece of bread, dip both sides in the egg mixture and place on top of the first slice to create a sandwich. Dip the sandwich again in the batter to coat and roll the sandwich in pecans to cover. Pressing the nuts into the bread slices. Heat the oil in a large saute' pan and brown the French toast on both sides. Sprinkle with powdered sugar and serve with love!
