Measure Ingredient
2 cups Plain flour; (maida)
1 cup Gram flour
½ teaspoon Soda bicarb
2 tablespoons Curds
Salt to taste
Oil to shallow fry

Sieve together flours, soda and salt.

Take in a large bowl, add curds.

Add enough water to make a batter.

The batter should coat the back of a spoon easily.

Heat griddle, pour a serving spoonful of batter.

Spread thinly with back of spoon.

Sprinkle 1 teaspoon oil to shallow fry.

When crisp lift with spatula. Serve hot with chutney Makes: 10 - 12 dosas of 7" diameter Shelflife: Dry ingredients may be premixed, rest instant.

Texture: Thin and crisp.
