Holiday roast beef salad

Ingredients

8ouncesAlfalfa sprouts
1poundsRoast beef, thinly sliced
114 oz. can artichoke hearts, drained and halved
1smallRed pepper, seeded and cut into strips
½cupOlive or vegetable oil
¼cupWine vinegar
Salt and pepper
Chopped parsley

Directions

Arrange the alfalfa sprouts on a large platter. Roll up the roast beef slices and arrange on top of the sprouts. Place the artichoke hearts between the beef rolls and garnish the center with red pepper strips. Mix the oil, vinegar, and salt and pepper to taste. Spoon over the salad.
