Ingredients

¾cupSundried tomato bits
¼cupYellow corn meal
3largesCloves garlic minced
¾cupBoiling water
poundsLean ground beef
2Eggs
cupChopped green onions
1cup4 oz. green chiles (mild)
Diced
cupChopped fresh cilantro
1Jalapeno pepper chopped,
Seeded (optional)
teaspoonSalt
¼teaspoonPepper

Directions

In large bowl, mix tomato bits, corn meal, garlic and water, set aside 10 minutes. Add remaining ingredients. Mix with hands to blend thoroughly. In shallow baking pan or dish form a loaf with meat mixture. Sprinkle with small amt. of corn meal Bake 375 F. for 1 hr or until juices run clear. Let stand for 10 minutes before slicing.
