High country meatloaf

Yield: 6 Servings

Measure Ingredient
¾ cup Sundried tomato bits
¼ cup Yellow corn meal
3 larges Cloves garlic minced
¾ cup Boiling water
1½ pounds Lean ground beef
2 \N Eggs
⅔ cup Chopped green onions
1 cup 4 oz. green chiles (mild)
\N \N Diced
⅓ cup Chopped fresh cilantro
1 \N Jalapeno pepper chopped,
\N \N Seeded (optional)
1½ teaspoon Salt
¼ teaspoon Pepper

In large bowl, mix tomato bits, corn meal, garlic and water, set aside 10 minutes. Add remaining ingredients. Mix with hands to blend thoroughly. In shallow baking pan or dish form a loaf with meat mixture. Sprinkle with small amt. of corn meal Bake 375 F. for 1 hr or until juices run clear. Let stand for 10 minutes before slicing.
