Green sauce with capers and herbs

1largeBunc flat-leaved parsley
1ounceFresh mint
1ounceCapers
2Eggs; hard-boiled
4tablespoonsFresh breadcrumbs
2Garlic cloves
2tablespoonsWhite wine vinegar
1tablespoonSugar
8tablespoonsExtra virgin olive oil
Salt and pepper

Directions

1. Finely chop the cucumbers, parsley, mint and capers. Mash the hard-boiled eggs.

2. Put all the ingredients in a food processor and blend everything together to produce a smooth, green sauce. Serve warm or cold.
