Green sauce with capers and herbs

| 4 | Pickled cucumbers | |
| 1 | large | Bunc flat-leaved parsley |
| 1 | ounce | Fresh mint |
| 1 | ounce | Capers |
| 2 | Eggs; hard-boiled | |
| 4 | tablespoons | Fresh breadcrumbs |
| 2 | Garlic cloves | |
| 2 | tablespoons | White wine vinegar |
| 1 | tablespoon | Sugar |
| 8 | tablespoons | Extra virgin olive oil |
| Salt and pepper | ||
Directions
1. Finely chop the cucumbers, parsley, mint and capers. Mash the hard-boiled eggs.
2. Put all the ingredients in a food processor and blend everything together to produce a smooth, green sauce. Serve warm or cold.
