Green and red tomato salad

Yield: 4 servings

Measure Ingredient
3 larges Green tomatoes*
3 larges Red-ripe tomatoes
1 medium Red onion
1 large Garlic clove, finely chopped
½ teaspoon Salt
⅛ teaspoon Freshly ground pepper
2 tablespoons Lemon juice
3 tablespoons Fresh basil
;coarsely chopped
3 tablespoons Wine vinegar
½ cup Olive oil
½ teaspoon Ground cumin

DRESSING

*Pick the green tomatoes just before they begin to ripen red.

Cube green and red tomatoes. Cut onion into thin slices and separate into rings. Combine tomatoes and onions in a salad bowl with the chopped basil.

Combine the dressing ingredients, mixing well. Add dressing to salad and toss. Let set about 30 minutes to blend flavors. Delicious with BBQ!

Yield: 4 to 6 servings.
