|6 \N||Large, juicy apples,grated|
|½ cup||Sifted matzo meal|
|\N \N||Grated peel of 1 lemon|
|\N \N||Blanched almonds|
|8 \N||Eggs, separated|
Stir the sugar and yolks well; add the grated apples, and mix well.
Then stir in the matzo meal and the grated lemon peel. Last add the stiff bveaten whites of the 8 eggs. Bake in an ungreased spring form pan. Sprinkle a handful of blanched almonds on top just before baking. Bake at 325 F. approx. 1 hr.
